Vietnamese Egg Coffee Caphe Trung

Vietnamese Egg coffee, or Ca Phe Trung or Cafe Trung, is a Northern Vietnamese drink, a special drink you should taste in Hanoi.

Vietnamese “egg coffee” is technically a drink but we prefer to put it in the dessert category. The creamy soft, meringue-like egg white foam perched on the dense Vietnamese coffee will have even those who don’t normally crave a cup of joe licking their spoons with delight.

In Hanoi, follow the tiny alley between the kitschy souvenir shops at 11 Hang Gai into the clearing, and up several flights of increasingly dicey stairs to pair your ca phe trung with an unbeatable view of Hoan Kiem Lake.

Directions

  1. Brew a small cup of Vietnamese coffee.
  2. Crack an egg and discard the whites.
  3. Put the yolk and the sweetened condensed milk in a small, deep bowl and whisk vigorously until you end up with a frothy, fluffy mixture like the one above. Add a tablespoon of the brewed coffee and whisk it in.
  4. In a clear coffee cup, pour in your brewed coffee, then add the fluffy egg mixture on top.
  5. Presto. Egg coffee.
